Dinner: Monday, January 7, 2019

Much to my surprise, the wife took a shot at making take out Chinese food for dinner tonight. Well, I said much to my surprise, but I’m not really surprised. She’s worked hard to expand her fantastic cooking chops into unfamiliar terrain, including not only Chinese but Thai and Mexican as well. But I digress. The wife’s offering tonight was Orange Chicken with steamed rice. It wasn’t perfect, but it was really good for a first attempt. The best part was the crispiness of the fried coating. It stood up nicely to the orange sauce and remained crispy. The sauce itself was good, but a bit on the tart side when compared to our usual take out haunts. I also thought the meal overall could have used a little more seasoning. If I did numeric scores, I’d give the wife a seven out of ten for her first foray into orange chicken. Looking forward for to her second attempt.

Lunch: Thursday, January 3, 2019

So, it is not unusual for my lovely wife to pack up leftovers, for my lunch at work, from dinner the night before, and when it is her potato and chicken yellow curry with jasmine rice, I don’t complain at all, as it is one of my favorite things to eat. Yes, it does start with a prepared yellow curry sauce, my current favorite, Mae Ploy Thai Yellow Curry Sauce, but she then spices it up with either Thai chili peppers, habaneros or one of the other varieties that we have begun growing at the house. I highly recommend this one if you don’t have time to make your own yellow curry sauce from scratch. It is also vegetarian before you add whatever ingredients you want, it is useful for vegetarian curries, which the wife often makes me when I am dieting. Either way the flavor is excellent and I look forward to this meal very much, for lunch or dinner. Even my youngest child loves this one.

As some of you know, I’ve been losing weight by eating a mostly vegetarian diet during the week, at least until the last couple of months or so. Various things have upset the apple cart so to speak, but I’ll soon be back to it. Prior to that I had left over Hamburger Helper Lasagna for lunch. Lol. It’s a childhood favorite and still my favorite of the Hamburger Helper line-up. Granted it’s not gourmet, but not everything needs to be. Foodie snobbery is nonsense. Loving food is all about enjoying what you love, cheap, expensive, both, whatever it may be.
